Ingredients:
1 cup (125 g) all-purpose flour, 1 tsp. baking powder, 1 medium lightly mashed banana, 1 large egg, 2 tbsp. 2% milk, 2 tbsp. vegetable oil, 1 tsp. vanilla, ½ cup (100 g) granulated sugar, 1 cup frozen or fresh chopped strawberries

Directions to make Strawberry Banana Muffins:
  • At 350° degree, pre-heat your oven.
  • In a bowl, mix flour and baking powder
  • Take other bowl and blend banana and egg vigorously.
  • In banana mixture; add milk, oil, vanilla and sugar. Blend all ingredients, till mixture becomes smooth.
  • Now add dry mixture into the banana and egg mixture slowly and blend all ingredients to resolve all the lumps.
  • Add chopped strawberries and mix it gently into the batter.

3 eggs, 3/4 cup canola oil, 1 cup sugar, 1 1/2 cups shredded zucchini, 2 ripe mashed bananas, 2 teaspoons vanilla extract, 3 1/2 cups whole wheat flour, 1 tbsp ground cinnamon, 1 1/2 tsp baking powder, 1 tsp baking soda, 1/2 cup dried cranberries, 1/2 cup walnuts

Directions to make Banana Cranberry Zucchini Muffins:
  • Pre-heat your oven at 325° F.
  • With the use of non-stick spray; grease muffin tray or use muffin papers.
  • Take one bowl and beat two eggs into it to get frothy consistency.
  • Mix oil, sugar, grated zucchini, bananas, and vanilla into the egg and whisk all the ingredients.
  • Now add flour, cinnamon, baking powder, baking soda, dried cranberries and walnuts. Mix all the ingredients to form smooth batter.
  • Pour batter into the muffin tray or muffin paper cup to the half or top, and sprinkle remaining walnuts on batter.

Vanilla or 1/2 tsp. Bourbon Vanilla powder, 1/4 tsp. ground Cinnamon, 11/2 tsp. baking powder, 1/2 tsp. baking soda, 1/4 tsp. salt, Oats for sprinkling on top and 2 mixing bowls

Directions to make Banana Muffins:
  • Turn on oven, and pre-heat at 200°C or 392°F.
  • Take one big mixing bowl. Take two peeled banana and smash them.
  • Add egg, sugar, soy/regular milk and yogurt in smashed banana and mix all the ingredients to build a little air in it.
  • Take another bowl and mix flours, flaxseed, cinnamon, baking powder, salt and soda.
  • Now add dry mixture into the banana mixture slowly and stir vigorously to build air in batter.

1 1/4 cup all-purpose flour, 1 tsp baking powder, 1/4 tsp salt, 3 ripe bananas,1 stick melted butter, 1 large egg, 1 teaspoon vanilla extract, 3/4 cup sweetened flaked coconut.

Directions to make Banana Coconut Muffins:
  • Grease muffin cups with non-stick spray and turn on oven for pre-heating at 350 F
  • Take one bowl and add flour, baking powder, salt. Mix all the ingredients.
  • In another bowl mash banana, melted butter, flaked coconut, egg and vanilla and blend vigorously to mix all the components.
  • Now in corporation with stirring, slowly add dry ingredients into the banana and coconut mixture. Whisk all the ingredients till consistent batter gets formed.

  • Turn on your oven and pre-heat at 325°.
  • Put muffin paper cup into the muffin tray.
  • In one bowl, mash bananas and mix flour baking soda and salt in other bowl.
  • Take another bowl and whisk butter and sugar.
  • Mix egg whites, bananas, apple sauce, vanilla into the butter and sugar mixture. Beat all the ingredients well.
  • Slowly add flour into the mixture and blend well to make smooth batter.
  • Lastly, add chocolate chips into the batter. Make sure that you do not mix chocolate chips.
  • Put batter into the muffin pan and back into the oven for 35-40 minutes.
  • Allow muffins to cool down and before serving.
